OVERVIEW

Older wines, especially red wines, form sediment in the bottle, known as depot. Decantation has the function to separate the wine from the unwanted depot and the tartar. It also enables the bouquet to unfold fully. The shape of the decanter and their opening upwards influence the result of the decantation. A large opening increases the exchange of oxygen, a narrow opening allows the oxygen to float above the wine.
